I wanted to take a moment to introduce myself. I have been canning for about 5 years now. When I had difficulties in my first pregnancy because of the processed foods I was eating, and I've always eaten pretty healthy, I was told that I had to cut out all processed foods or my unborn child's life was at risk.

I've been looking a lot more carefully at my diet and the foods we're eating around here since. Cutting out all refined sugar and flour, along with all pre-packaged, processed items was the beginning. Since then I've learned how to make my own breads, chips, tortillas, cereal, granola bars, dried fruit and veggies, and I started canning. I found that I can control the ingredients in our foods by making them myself, and it turns out that we have saved a great deal of money as well.

I have canned a number of fruits, jams, and tomato products. My favorites being mixed berry jam and apple harvest jam. We use a great deal of applesauce, pasta sauce, tomato soup, and tomato paste in our house. I have also canned many kinds of veggies, meats and beans, but that's for another lesson.

FAQ

  • Is canning going to take a huge financial investment on my part?

    Actually the opposite is quite true. Since I started canning we have saved thousands every year from our investment in canning supplies (that are used over and over again), and the fact that we have now become pretty adept at finding the best sales in town on produce. By preserving food when it's at it's cheapest, we keep from having to pay for it at higher costs all year round.

  • Is canning going to be incredibly hard?

    It turns out that you don't have to have any talent or skill to be able to can your own food. Yes, there's a learning curve the first few times you try it, which is why you start with one item at a time and perfect your skill before you move on to more complicated things. Practice makes perfect!

  • Is canning going to take up a huge amount of my time?

    Canning does take some time, but if you can invest one Saturday every so often, especially during the summer when the best fruits are usually in season, then no. I think investing a little bit of time into your family and their health to get a great deal on food and in the end have a better looking, better tasting product, is totally worth it.

  • How long is this course going to be and how long will it take me to get through?

    I am designing the water bath canning course so that you can go through it as slowly or as quickly as you'd like. If you can get through the whole thing in a day and be satisfied that you understand, then awesome. If you'd rather take it slower and repeat some lessons over and over, that works too.
